Bread Boutique, Junbi arrive on Witherspoon Street in Princeton

As quickly as Princeton eateries close or relocate, new ones arrive to take their space.

A franchise of Junbi, originally founded in California, is opening soon at 27 Witherspoon Street, the spot long occupied by Holsome Teas & Herbs. (Holsome now operates from the rear of the building.)

Junbi, which means “preparation” in Japanese, specializes in matcha-based beverages and soft-serve ice cream as well as teas and coffees.

“Everything we do is in preparation to serve our customers the best product, customer service, and experience,” Junbi’s website says. “We spend time vetting the farms in Japan and growing, harvesting, and milling the matcha itself takes tremendous preparation. We also want to help you Prepare Daringly for your days, goals, and wildest dreams.”

In Eclair Cafe’s former spot at 41 Witherspoon Street now stands Bread Boutique, the latest offering from Genesis Hospitality Group.

“We’re dedicated to creating from-scratch baked goods influenced by centuries of tradition, specializing in hand-formed breads and European pastries,” states the bakery’s website.

Bread Boutique also has a selection of sandwiches, $7 to $10, including caprese on focaccia, smoked salmon on rye, brie and butter on baguette, and others.

In addition to Bread Boutique, Genesis operates the Peacock Inn, Chez Alice, and Proof Pizza in downtown Princeton.
