Princeton Day School’s dining services company earned a three-star certification from the Green Restaurant Association.
Flik Independent School Dining is one of 15 other cafeteria’s below the college level to receive the certification and one of five schools to have three stars.
PDS partnered with Flik several years ago to to create a more sustainable food service and provide healthy, fresh cooked meals in a way that is less harmful to the environment.
The Green Restaurant Association’s mission is to create an environmentally sustainable restaurant industry. It strives to do so by developing guidelines and certification standards and rating restaurants by that criteria.
GRA grades institutions in the areas of water efficiency, waste reduction, recycling, sustainable furnishings and building materials, sustainable food, energy, disposables, and chemical and pollution reduction.
PDS earned a three-star certification because of its high percentage of locally purchased foods, composting program, many recipes that are nutritious, but low on the food chain, the reusable utensils and dishware, the daily food cooked from scratch, and their green cleaning supplies.
The School achieved 177 out of 200 possible points.
